Quickest Chocolate Cake EVER!!!

This weekend we enjoyed a great afternoon of ice skating. I’m not much of an ice skater myself.  I have only tried a few times. But its so much like rollerblading I did ok. My 9 yr old LOVES it and like a typical kid … she just got right on the ice and away she went! Her & my husband flew around just fine all afternoon. My 5 year old has only skated once & that was what when she was 3. She did much better this time & lasted just over an hour on the ice. After all that work it was time for hot chocolate & “cake in a cup”! Thats right...in a cup.

This recipe was emailed around a few years ago. And when my Aunt ( The Big Red Barn ) sent it to us we tried it . Its something the kids & I like to make any time of year, but its such a great comfort food when you need some warming up.


You’ll need….


4 tablespoons flour, 4 tablespoons sugar, 2 tablespoons cocoa 1 egg, 3 tablespoons milk, 3 tablespoons oil, 1 dash vanilla, 1 dash salt , 1 dash baking powder & a handful of chocolate chips.

Mix all the dry ingredients in a mug.


Then add the milk, oil, egg and vanilla & mix well.


Micro for about 3 min’s . Cake will bake up over the top of the mug. Remove carefully and “plop” on to a plate and let the crowd go to town!


One mug makes several servings after you brake it up.
Its fun to experiment with adding more cocoa or sugar, to make it just to your taste. I always add more cocoa & more chocolate chips then the recipe calls for.We sometimes like to add marshmallows to the top of the cake when its fresh out of the cup!

Its not gourmet but it’s the best 3 min cake we’ve ever made. . (or maybe its who you share it with that makes it taste so good!)
